Walk into most Indian bar menus and the gin is British, the vodka is Polish or Swedish, and the whisky is Scotch dressed up as something local. This one flips that entirely: every bottle behind the counter, from the base spirit up, is distilled within a few hundred kilometres of the room you’re standing in.
Why bother
It started as a cost problem — import duty on spirits pushes menu prices into territory that empties a room fast — and turned into a genuine bet that Indian distilling had caught up enough to not need the imported name on the label.
Three years in, regulars order by bottle, not by category. That’s the tell that the bet worked.
